Fish Parcels Thai-Style

Serves 1
Ingredients:
3.5-5oz salmon fillets (ideally organic)
2 tbsp fresh lime juice
2 tsp fresh ginger, grated
½ tsp Thai fish sauce
A few sprigs of fresh fennel
Instructions:
Preheat oven to 300 degrees F.
Cut squares of aluminium foil for each fillet. Place the fillet skin side down onto the foil and fold it loosely into an open parcel.

Homemade Fish Fingers

Ingredients:
1 lb fish fillets
1/3 cup bread crumbs
1/3 cup grated Parmesan cheese
1 egg, beaten
½ tsp paprika
½ tsp dried parsley
1 tbsp butter, melted
Instructions:
Preheat oven to 450 ºF.
In a shallow dish, combine bread crumbs, Parmesan cheese, paprika and dried parsley. Cut the fish fillets into fingers about 3ins long x ½ inch wide.
